Summer Veggie Frittata
An easy, delicious, and healthy veggie frittata with all your 5 a day is the perfect way to start your day.
Serves 4 Time: 30 minutes
- 6 large free-range eggs
- 1 lemon
- 20g Parmesan cheese
- 30g Peas
- 4 Tomatoes
- Il Gusto Extra Virgin Olive Oil
- ½ a small bunch of asparagus
- Il Gusto Olive Oil
- 10g feta cheese
- Salt and Pepper
For the salad:
- a small handful of pea shoots
- 10g feta cheese (optional)
Method
Preheat the oven to 220°C/ Gas 7. Combine the eggs with sea salt and black pepper in a bowl. Mix together and set aside. Mix the egg mixture with the peas. Add half a lemon's zest and juice, grated Parmesan, 2 tablespoons of extra virgin olive oil, and a pinch of pepper. On a low heat, place an ovenproof frying pan. Add 1 1/2 tablespoons of olive oil to the pan, then add the asparagus slices and fry for a minute. Pour the egg mixture over the asparagus in the pan. On top, scatter the feta and grated Parmesan.The pan should be baked for about 5 minutes, or until golden brown. Drizzle over ½ a tablespoon of Il Gusto Extra Virgin Olive Oil, add a squeeze of lemon juice, crumble some Feta Cheese and mix with the Pea shoot. When the frittata is ready, turn it out onto a board and serve it with the salad and some crusty wholemeal bread, if you like.
